Ready! Set! Hut! It’s time to start planning for Insta-Feast IV (otherwise known as Super Bowl XLV). Now no matter the size of your Super Bowl viewing crew, a few things are certain – finger foods, finger foods, finger foods! But let’s face it, with so many peeps on hand, planning a Super Bowl viewing party can be a bit overwhelming. The best way to approach it is with a strategy, simply mix pre-made store bought items with fresh veggies and easy homemade fare. To make it even easier, we’ve broken down this approach for you!
Let’s start with the healthy staples of a good spread: veggies, fruit and nuts. You can purchase a vegetable tray beforehand but we’d like to challenge you to assemble it on your own. It’s easy! Simply purchase a variety of dippable veggies (broccoli, cauliflower, celery, cherry tomatoes, carrots, cucumbers – whatever you’d like). Then arrange them on a platter around a bowl of Ranch or French Onion Dip. For your fruit tray, hit up the refrigerated section of your grocery store’s produce department and purchase whatever looks good. You can even buy fruit that requires no action on your part – oranges, apples etc. To complete the healthy spread, add in a couple of bowls filled with nuts. They’re perfect for easy snacking!
Next, a mouthwatering layered dip. Our Super Bowl parties aren’t complete without one! They’re always a hit plus super easy to make. If you haven’t made one before, here’s an easy to adapt recipe for you to start with:
Super Southwest Layered Dip
16 oz fat-free canned refried beans
1 package taco seasoning
3 medium avocados, Hass, finely mashed
1/4 tsp table salt
1 tsp fresh lemon juice
1 cup reduced-fat sour cream
1 package cream cheese, softened
1 small jar of salsa
1 cup shredded cheese, Sharp Cheddar
1 small tomato, chopped
2 medium scallions, sliced
1 small can of chopped black olives
2 tbsp fresh cilantro, chopped
Mix the beans and package of taco seasoning in a small bowl. Spread the seasoned beans evenly over the bottom of a 9×13 inch glass-baking dish.
In another small bowl, combine the avocado, salt and lemon juice. Spread the avocado mixture over the beans.
Mix the sour cream and softened cream cheese in a small bowl. Layer on top of the bean mixture.
Next, layer the remaining ingredients on top in the order listed above.
Serve immediately with tortilla chips, jicama slices and other fresh vegetables for dipping. Or chill until ready to use.
Now that you’ve covered the basics of the spread, it’s time to sprinkle in some heartier fare. This is where the frozen and pre-made section of your grocery store comes in super handy! Consider the taste buds of your crowd, then pick up three to four items that are sure to please ‘em. Buffalo chicken tenders, quesadillas, burritos, eggrolls – you know what your friends like, so get their favorites! And depending on the nature of your goodies, you should also pick up some additional dips such as honey mustard, spicy mustard and sweet and sour sauce. To round things out, you can also add in a few bowls filled with simple snacks such as Chex Mix, potato chips and popcorn. And since you’re doing all the hosting, get everyone else to help! Ask your friends to bring their favorite ice-cold beverages (soft drinks, beer, wine) and desserts. With this sort of a delicious spread, all of your guests will be well-fed and happy – even if the game and commercials are a flop!
