Easy To Make, No-Bake Holiday Candy

We can say this about our favorite holiday candy recipes: they’re budget friendly, foolproof, super easy, no-bake and require minimum time to make. Oh, and we forgot to mention, they’re DELICIOUS! So if you have lots of gifts to give (think office, organizations etc.) or attending multiple holiday parties this year, whip up a few batches of these delicious concoctions and everyone will thank you for it.

Bourbon Balls

2 1/2 cups chocolate wafers, crushed
2 tablespoons cocoa
1 1/4 cups confectioners sugar
1/2 cup Bourbon
2 tablespoons white corn syrup
1 cup pecans or 1 cup walnuts, broken

1) Sift the cocoa with 1 cup sugar.
2) Stir in the Bourbon and syrup.
3) Add the crushed wafers and nuts.
4) Mix thoroughly.
5) Chill for 30 minutes.
5) Shape mixture into small balls and dredge with remaining sugar or leave them plain.
6) Store in a tin.

Makes 24 servings, Prep 20 minutes, plus chilling time

Make these delicious treats a few days ahead of time for the best flavor. It’ll help the taste of the alcohol “cure” with the rest of the candy. You can also modify with vanilla wafers or other liquors, such as Rum or Irish Cream.

Candy Cane Bark

1 package (10 to 12 ounces) white baking chips
12 ounces red candy coating disks
1 teaspoon peppermint extract
2 to 3 candy canes, crushed

1) Line a baking sheet with foil; set aside. In a microwave, melt chips; stir until smooth. Spread into a 13″ x 9″ prepared baking sheet.
2) In a microwave, melt candy coating; stir until smooth. Stir in extract. Spread over white layer; sprinkle with candy.
3) Chill for 10 minutes or until firm. Break into pieces. Store in an airtight container.

Makes 24 servings, Prep 20 minutes, plus chilling time

You can easily modify the flavor of the bark by opting for a different extract, such as pecan or cherry. You can also modify the color of the bark by using a different color coating disks, such as white or green.

8-Minute Peanut Brittle

1 cup sugar
1/2 cup light corn syrup
1 cup raw peanuts
1/8 teaspoon salt
1 tablespoon butter
1 teaspoon vanilla
1 teaspoon baking soda

1) Combine the first 4 ingredients in 2-quart microwave mixing bowl.
2) Microwave on high for 2 minutes.
3) Stir.
4) Microwave on high for 4 minutes.
5) Add butter.
6) Microwave on high for 2 minutes. (Keep an eye on it as the brittle should not get too dark or smell burnt, it should smell nutty)
7) Stir in vanilla and soda until light and foamy.
8) Spread on buttered baking sheet as thinly as possible.
9) Cool. Break into pieces.

Start off with our suggested microwave times, you may have to modify depending on the power of your microwave. You can also cut out the butter by lining pan with foil. Once the brittle cools it’ll peel right off!
