As the heat cranks up, we start thinking about one of our favorite summer things: refreshing Riesling concoctions! The following recipe for a Raspberry Melon Riesling Slushy is perfect for a hot summer weekend or any time you and your friends are thirsting for a cold, wine-spiked treat.
Raspberry Melon Riesling Slushy
1 bottle Riesling
1 1/2 cups frozen raspberries
1 tablespoon fresh lime juice
2 tablespoons sugar
1 cup honeydew melon, diced into cubes
Chill the bottle of wine for 3-4 hours. When ready to prepare, measure out one cup of Riesling. In a blender or food processor, puree the raspberries with the remaining Riesling, lime juice and sugar. Pour the mixture into ice cube trays and freeze 4-6 hours or until solid. When ready to serve, puree the ice cubes with the melon and remaining cup of wine.
