Easy & Delish Recipe for Mini Pumpkin Muffins

Everyone loves pumpkin flavored anything right now. Well, shamelessly, we also fall into that category. We can’t resist the drink options, the baked goods, the scents…it’s everywhere and it’s delicious.


So here we are providing you with a healthy spin on pumpkin treats, mini pumpkin muffins! And if you don’t mind the extra calories, an optional cream cheese frosting.

WARNING: seriously addictive recipe below.

Mini Pumpkin Muffins

1 box spice cake mix
1 cup water
1 cup canned pure pumpkin (note, NOT canned pumpkin pie filling)
3 eggs
Cooking spray

What you’ll need:
Mixing bowl
1 mini muffin tin


1. Preheat oven to 350 degrees

2. Combine cake mix, water, pumpkin & eggs in a bowl.

3. Mix until there are no lumps.

4. Spray pan with cooking spray.

5. Fill muffin tin, each should take about with 1 tablespoon of batter.

6. Bake for 10 minutes or until muffins spring back when touched.

Cream Cheese Frosting (optional)

1 pkg. (8 oz.) Cream Cheese, softened
1/4 cup butter or margarine, softened
1 tsp. vanilla
1 pkg. (16 oz.) powdered sugar (about 4 cups)



1. Beat cream cheese, butter and vanilla in large bowl with mixer until blended.

2. Add sugar gradually, beating after each addition until blended.

Make sure muffins are cool before frosting, or serve as an optional dip!
