Who wants to spend hours in the kitchen after Thanksgiving? Not us. The perfect Thanksgiving leftover recipe is both different AND easy! Which is just what the RELAX kitchen is bringing you this week.
Let’s start by putting the leftover turkey to work on a plate of nachos.
You’ll need some corn chips, canned black beans, chopped canned jalapeños and cheddar cheese. Arrange the meat and fixin’s in layers, top with some shredded cheddar cheese and microwave on high power for about 30 seconds.
Sprinkle on a little chopped fresh cilantro if you like and serve with salsa, sour cream or guacamole.
If you want to push the envelope, scrap the traditional Tex-Mex toppings and revise with your other holiday leftovers. Yes, cranberry sauce included!
Now, let’s talk sandwiches. The same old turkey and mayo on white gets awfully dull.
Liven it up by changing breads: sourdough, pita or focaccia from the deli section of the supermarket.
Next, the accompaniments. Instead of mayonnaise, what about a little honey mustard? Mild cheeses like Munster, Provolone and goat cheese are a perfect match with turkey.
Or perhaps you want to go a bit further uptown with a little sliced avocado and bacon? Maybe some tomato slices that you’ve marinated in a few tablespoons of balsamic vinegar? That’s not your father’s turkey sandwich!
Not far out enough into left field? Alright then, how about a Thanksgiving frittata?
Start by preheating your oven to 400°. Apply a light coating of cooking spray to a pie plate and sprinkle in about a cup of diced turkey and two cups of leftover dressing.
Next combine three eggs with about half a cup of milk, and beat them together with ¼ teaspoon salt, 2 tablespoons chopped parsley or chives and some fresh ground pepper.
Pour the egg mixture over the filling and sprinkle on ¾ cup of grated cheddar cheese.
Bake about 25 minutes, until the cheese turns golden brown and the center is firm. Serve warm.
